I assume at some point you'll be sampling some of this locally raised beef, so I'm hoping you'll let us know how it tastes.
I may be mistaken, but I believe that a cow is cut between the twelfth and thirteenth ribs to quarter it. The cut between the fourth and fifth ribs yields the two subprimal cuts; the rib and the chuck.Stevenoreply@blogger.comtag:blogger.com,1999:blog-14963913.post-91292018222705869222010-10-07T02:05:22.863-04:002010-10-07T02:05:22.863-04:00That's the normal response to seeing an animal...That's the normal response to seeing an animal slaughtered in a humane way, especially in an old-fasioned, non-industrial setting. There's this weird idea your PETA/vegan types have that if everyone knew where steak came from they'd become vegetarian. That's not normally what happens to farmers, though there is the occasional butcher who develops vegetarian tendencies.

Commercial abbatoirs need not be any less humane, and the good ones aren't. It's actually more profitable to do it right. Unfortunately, what's also profitable is to do it very, very, very wrong -- and let me tell you, if you're cutting corners under the emasculated regulatory apparatus that 'protects' US food supplies, you're doing some pretty gross things.

The best birthday present my wife has given me was a hog-butchering class.
